Back Bacon
This is the Bacon you first encountered on your breakfast plate in the U.K. or in the Republic of Ireland. You thought that it was ham!
'Tis not a bit like the bacon you purchase in the U.S.A. That's known as "Streaky Bacon" in Britain and Ireland.
"So called" Canadian Bacon is back bacon. It's good, but does not have the same taste as the U.K/ Ireland back. It's all in the curing.
My money is on the real thing.
