Splendid Lunch with a Super Spud.


 

Hassleback Potato, Vegetarian Chili and Brabander Cheese.


Brabander is a Dutch Gouda type cheese, made with goat's milk. It's  good.  I'd have been wiser to use a cheese which melts.

I had it in mind to sprinkle the spud with crispy bacon, but I forgot to fry a rasher or two.

You can prepare your own Hasselbacks if you have a very sharp knife and a steady hand. The spud should be sliced, but not all the way through.
